Corn Maque Choux

(cajun creamed corn)
Serves 4-6 as a side dish

This is a pretty simple recipe that is very versatile and super tasty. I find that frozen corn, because of the moisture content and texture sucks up more flavor than fresh but obviously fresh or canned would work just fine.

1 tbl. EVOO
1 cup diced andouille sausage
½ ea. red bell pepper, small diced
½ ea. green bell pepper, small diced
1 cup Spanish onion, small diced
1 rib celery, small diced
2 ea. garlic cloves, minced
1# frozen corn
1 tsp. cajun spice
½ cup heavy cream

In a medium size pot over medium heat add evoo and once hot add and sauté andouille, garlic, thyme, bell peppers, onion, celery for 5 minutes until soft. Then add corn and cajun spice and cook for 15 minutes. Finish with heavy cream and simmer for an additional 5 minutes. Remove from heat & season.
